Spicy Corn Ribs With Coriander Cream

Big things happened today, BIG. I finally caved in and bought an air fryer. Truthfully I've always thought they were a bit unnecessary. You know, who actually needs another kitchen appliance, right? But I've been doing my research and actually, I am suitably impressed. But more on that further down. To christen my air fryer, I decided to make my Spicy Corn Ribs with a Coriander Cream for dinner! What's better than BBQ corn on the cob?

These spicy corn ribs are coated in a spice mix of smoked paprika and cayenne pepper, with garlic and onion powder, sea salt, cracked pepper and olive oil, and cooked in an air fryer for just 15 minutes. Now these corn ribs are on the spicy side, so to balance this out, I have made a zingy Coriander Cream. Its as simple as adding sour cream, coriander, fresh lime juice, celery salt, ground cumin and garlic powder into a food processor or blender, and blitzing until silky smooth. The creaminess and acidity balances out the smoky spices flavouring the crispy corn ribs. Basically, this is a match made in heaven and you must make them now. What are corn ribs?

For those who aren't in the know, corn ribs are thin strips of corn. A cob of corn is cut into quarters using a sharp knife. They are seasoned and when baked, the corn curls up slightly and resembles a curved rib shape. They are also super quick and easy to make. Not to mention, absolutely delicious! 

 

What is an air fryer? 

An air fryer is a small convection oven designed to sit on a kitchen bench top. A fan circulates hot air at high speed, producing a crisp layer. In other words, it simulates deep frying without submerging the food in oil. The cooking time is really quick and because of this and the fact that they're a lot smaller than a normal kitchen oven, it's more energy efficient. It's also really easy to use and really easy to clean. 

After doing a lot of research online, I dropped into Kmart and bought their 5.3L Air Fryer for $89. I had read a lot of great reviews and heard many good things from friends, so I thought it was time! 

What if I don't like spicy food?

No worries! Corn ribs are very adaptable, and they are perfect for creating a seasonal that suits whatever dish you’re preparing. If you don't like spicy food, take out the smoked paprika and cayenne pepper. As an alternative, you could season your corn ribs with garlic and onion powder, dried coriander, fresh lemon juice, sea salt, cracked pepper and olive oil. There are so many different ways you can season corn ribs, so get creative in the kitchen. 

 

How do I cut corn? 

Honestly, cutting raw corn (that's not been cooked) is not easy. The centre of the corn is really hard, so you'll need a sharp knife and a steady surface to cut the corn into 4 strips (quarters). As you will see here, my first attempt was a massive fail. Then I decided to cut the bottom and the tip of the corn off, which allowed me to cut into the corn a little more easily. I prefer to cut the corn vertically, but be careful with your knife when you do this. You can cut the corn laying down horizontally, but I found this squashed the corn underneath.
